According to data provided by the French Potato Interprofessional Organisation, the current situation of the sector highlights key figures, structural trends and the factors behind this scenario.
Expanding acreage after two years of decline
The Interprofessional notes that organic potato acreage in France increased by +6.9% in 2025, confirming a recovery after two consecutive seasons of decline (2022–2023 and 2023–2024). However, this growth has not been uniform.
There has been a notable increase in areas dedicated to industrial processing, up 17%, while growth in the fresh market segment has been more moderate, at +6%.
The key takeaway is that this expansion is not driven by higher end-consumer demand, but rather by a shift in production allocation.
Three regions account for 80% of production
Organic potato production in France is highly concentrated in three regions: Bretagne – Grand Ouest, Hauts-de-France and Centre, which together represent 80% of the total area.
Their evolution in the 2024–2025 period shows shifting dynamics: Bretagne – Grand Ouest declines by 4 points, Hauts-de-France increases by 3 points and Centre rises by 1 point.
This reflects a gradual shift in production leadership, with particularly strong growth in northern France.
Strong production growth driven by yields
One of the most striking figures is the increase in production, which rose by +31.3% compared to the previous season.
This growth is explained by several factors: favourable climatic conditions (dry and warm weather), lower disease pressure and more efficient irrigation use.
Yields increased across all regions, with particularly strong performance in Hauts-de-France and Île-de-France.
The key issue: production ≠ marketable output
The French Interprofessional highlights a critical issue: higher gross yields do not necessarily translate into more marketable volume.
This is due to factors such as oversized tubers in the fresh segment and excess dry matter content in processing potatoes.

As a result, part of the production does not meet commercial standards, reducing the effective supply available on the market.
Estimated total production
Considering that the study covers between 80% and 85% of contract-based production, total output in 2025 is estimated at between 64,000 and 69,000 tonnes.
This positions the year as one of the most productive in recent times, albeit with limitations in terms of commercial usability.
Declining consumption in supermarkets
The main structural challenge for the sector is the continued decline in consumption in supermarkets.
This leads to lower sales volumes, reduced revenue and downward pressure on prices, reflecting weakening demand in the retail channel, which is crucial for the organic market.
