Ultra-frozen vegetables are actually one of the best examples of healthy processed foods provided by the food industry to make our lives easier.
In fact, they can even be nutritionally superior—and better in terms of flavour and other sensory properties—because these vegetables are harvested at their optimal stage of ripeness and frozen extremely quickly. Powerful industrial freezers operate at around –40°C so that the vegetables reach –18°C, the ideal freezing temperature, as fast as possible.
Of course, these techniques have nothing to do with what our home freezer can achieve… they are completely different worlds.
So, the next time you hesitate before putting those bags of frozen vegetables into your shopping cart, there’s no reason to worry.

That said, it is always worth checking the ingredients list to avoid surprises, as some mixed frozen vegetable products may contain refined oils or added salt.
Most frozen vegetables are exactly what they should be: washed, cut and frozen vegetables, ready to cook in a frying pan, oven, microwave or air fryer. They can also be added straight from the freezer, without the need to defrost beforehand.
